Harvested at the optimum moment of ripening, veraison, the moment when the fruit turns from green to purple. At this stage the fruit offers its best juice, the “Extra Virgin Olive Oil” without losing aromas or flavours unlike in late harvests. We sacrifice volume for quality, since at veraison the fruit does not offer its greatest quantity of oil, but rather in more mature harvests and of great quality.
